Get the dough warming to room temperature for 30 minutes to 2 hours.

Divide the dough into up to 4 equal pieces. Tip: sourdough works best with wet hands. Try wet and/or floured hands to see which you prefer.

Press the dough into a circle (8" for 4 pieces, 12" for 2 pieces) onto a floured surface. If the dough is difficult to shape, let it rest for 15 minutes longer to allow the gluten to relax. Tip: after pressing into a circle shape, try pressing pizza crusts into cornmeal to decrease crust sticking if sliding onto pizza stone or into pizza oven.

Add sauce, cheese and toppings of your choice once you have a good strategy on sliding your pizza to its final cooking surface. In our home, we use a Solo Stove pizza oven. I like to use wooden paddles, dusted with cornmeal, to hold the pizza as I add toppings.
